How We Sweeten Our Chocolate

Sweet Chocolate: No Refined Sugar. How We Do It.

For those who want to eat healthier, sugar is often seen as a demon. As humans, we all crave a sweet flavour, but the refined sugar found in many modern processed foods is linked to numerous health issues, such as high blood pressure, diabetes, and obesity.

During processing, refined sugar is stripped of all essential nutrients like vitamins, minerals, and fibre, leaving only a highly caloric substance with no nutritional value. Refined sugar prompts rapid increases in blood sugar levels, causing the body to produce more insulin — a hormone that, when in excess, leads to weight gain.

At House of Chocolate, we believe cutting out sugar entirely is unnecessary for a healthy diet. Instead, we believe in finding the right kind of sugar. That’s why all our chocolate is sweetened only with natural, plant-based sweeteners prepared at low temperatures to preserve their natural benefits. These sweeteners are derived from a unique collection of fruits, berries, and vegetables.

Our sweeteners retain valuable nutrients such as vitamins, macro-and microelements, and amino acids, which are essential for the proper, slow digestion of glucose and fructose, avoiding the short-term blood sugar rises caused by refined sugar that are so often the cause of weight gain. They also retain the beneficial natural properties of their source ingredients, whilst providing the same incredible sweet flavour to satisfy that sweet craving.

Jerusalem Artichoke Syrup

Jerusalem artichoke syrup is a natural sweetener derived from the root of the Jerusalem artichoke or ‘topinambur’ plant – a type of sunflower native to North America. While retaining an incredibly sweet flavour, the syrup is lower in calories than regular sugar. For instance, if a recipe calls for 3 tablespoons of sugar, you can achieve the same sweetness with just half the amount of Jerusalem artichoke syrup. With a glycemic index of 13-15, it has a much gentler impact on blood sugar levels lower than refined sugar.

Beyond its sweetness, Jerusalem artichoke syrup is a source of vitamin C, potassium, magnesium, and inulin, offering both sweet flavour and nutritional benefits.

Dehydrated Juices

We create our own dehydrated juices from fresh fruits and vegetables with no added salt or sugar. Some of the varieties we produce include melon, grape, mango, and cherry. The process begins by pressing the juice from the fresh fruits or vegetables. Then, we use specialised vacuum equipment to gently remove most of the moisture at low temperatures.

This results in a concentrated powder rich in vitamins, flavonoids, carotenoids, and anthocyanins.

Our dehydrated juices retain their natural sweetness, allowing them to be used in small quantities. Additionally, our low-temperature dehydration method preserves their low glycemic index, making them a healthy, flavorful option.

Molecularly Dried Fruits and Berries

We use a wide variety of molecularly dried fruits and berries in our products. This advanced drying technique preserves the natural appearance of the fruits and berries—their colour, texture, and volume—while also retaining their flavour and nutritional value.
The process begins with instant freezing, turning the fruits and berries into ice. Then, specialised equipment removes the ice crystals at sub-zero temperatures, ensuring that all vitamins, microelements, and macroelements are preserved.

Some of the berries are kept whole and later dipped in chocolate. Others are ground into a fine powder, which is added to our chocolate mixture. This not only imparts a subtle sweetness but also gives the chocolate a vibrant, beautiful colour.

Coconut Palm Flower Nectar

Thanks to the low-temperature processing, which never exceeds 45 degrees, coconut palm flower nectar retains essential nutrients like iron, zinc, copper, B vitamins, and amino acids. With a glycemic index of 35—half that of refined sugar—it provides a much gentler impact on blood sugar levels.

The high fibre content further helps to prevent sudden spikes in blood glucose. Additionally, the nectar imparts a delightful caramel sweetness to any product it’s added to, making it both a nutritious and flavorful sweetener.
