The magic of our chocolate begins with light fermentation. After harvesting, the beans undergo a four-day fermentation period, during which they are gently heated to 45°C in a vacuum. This meticulous technique is essential for unlocking the natural, nuanced flavours that set our chocolate apart while preserving significantly more antioxidants than traditional, longer fermentation methods.


To preserve their rich aroma and flavour, the cacao beans are transported to our production facility in specialised vacuum-sealed bags, protecting them from light, moisture, and external elements. Upon arrival, every batch undergoes a thorough inspection before moving on to the next stage.
Once at our facility, the cacao beans are rigorously pre-cleaned to ensure only the best beans are selected. We carefully inspect and remove any broken or deformed beans, ensuring that nothing compromises the flavour of our chocolate.


The beans are then thoroughly cleaned in specially designed baths using soft artesian water drawn from deep wells. After an initial wash, they are soaked in warm water for several hours, enhancing their purity and preparing them for the next stage.
After soaking, the beans move to a centrifuge, where the outer shell is separated from the nibs. Our unique cold-cleaning process, which avoids high-temperature roasting, preserves the ‘living’ qualities of the cacao, including its distinctive flavours, natural enzymes, and high antioxidant content. Cold-cleaning enhances both the taste and health benefits of our chocolate.


The cleaned cacao beans are then finely ground into a smooth paste. Unlike conventional methods, we keep the cacao mass intact, preserving the natural richness and flavour of the cacao.


We take great care with every ingredient. Many of the nuts, grains, and seeds we add to our chocolate are soaked in artesian water to trigger germination, significantly boosting their nutrient content. Berries and fruits are molecularly dried, a low-temperature vacuum process which maintains their beneficial properties.
Crafting our chocolate involves the use of approximately 35 different machines and tools. The process of mixing and refining the chocolate mass takes anywhere from 8 to 36 hours, ensuring perfect consistency. Once complete, the chocolate is carefully moulded, cooled, and tempered to develop the ideal texture.


Once the chocolate is ready, it undergoes rigorous quality control before being sent for careful packaging. This step is just as crucial as our goal is to deliver the chocolate to you in its pure, unaltered state. To achieve this, we have developed special packaging that shields the chocolate and ensures it reaches you just as we intended – fresh, unbroken, and delicious.
